Italian Sausage Pie

Tuesday used to be labeled Taco Tuesdays, and Lord knows I love tacos. Well most anything Mexican inspired! I however started this blog for a change in the everyday meals. I have 4 children and a great hubby and we really love food but seemed to be eating the same thing over and over again. So Taco Tuesday this week will be ........

Italian Sausage Pie Tuesday, hummm not as nice of a ring but oh well. Here is to something new!

I will also have a side salad with my homemade dressing and I will be making cream of mushroom soup. The kids will get boring green beans.

Post dinner update: I liked the change of pace with the sausage pie. Hubby thought it was good but thought it to be more of a breakfast meal. I have to admit it would be pretty good as a breakfast dish with breakfast sausage. My oldest thought it was great and even went back for seconds, the middle two did not care for it but neither of them are big egg fans (unless it is hard boiled and the Easter bunny leaves them). The baby has not had egg so she was not able to enjoy any of it. She however ate a piece of radish so I think she would have loved it.

Meatless Monday kick starts

Meatless Monday is all in its name. You go meat free on Monday, no meat. Hubby is not on board with it so I will be making him the same old Chicken and Yellow Rice. I however will be making a garden salad with home made dressing for myself. I will be using Juila Child's basic vinaigrette. The recipe can be found here .

The ingredients themselves make my mouth water, minced scallions, dijon-type mustard, salt, fresh lemon juice, wine vinegar, olive oil, and fresh ground pepper.

All the veggies came from the local farmers market, nothing like supporting your community. Green leaf lettuce, vine ripe tomatoes, radish, red onions and cucumbers.

Post dinner update: The vinaigrette was not to my style, just a bit too much oil. So being the southern girl I am I added more vinegar and even more. We girls and boys from the south know that vinegar makes just about anything taste better. I let the flavors mingle and get to know each other for a few hours in the fridge.

Does anyone have major issues cooking rice like I do? I am the worlds worse rice cooker and it is not something I am proud of. I follow the directions to the T and I still get nasty gritty rice. If I cook it longer I get a fire hazard instead of a meal.
So hubby was on board with Meatless Monday, but because of my rice debacle he had no choice.

The salad was amazing if I do say so myself. In the future I will use Child's recipe, but instead I will add close to 1/2 cup of vinegar and maybe 1/4 cup olive oil.
